It's actually quite simple. It's basically just a representation of how the transition from darkness to brightness is captured in your image. Dark pixels are on the left, bright ones on the right.
While it always needs to be looked at within the context of your subject - is it predominately dark or light - it should generally tend towards a bell curve type of representation. If it's falling off the rh side, then you're probably overexposed; and if it's falling off the lh side, then maybe you're under exposed.
If it's basically somewhere that's not falling off the edges, then you're probably in a good area.
