Nikon Capture, NEF files, workflow

I just need some clarification on a point.

I sort out my shots via Nikon View, delete anything that cannot be salvaged or if the idea didnt work.

On the remaining shots I edit though Nikon Capture (NC), sometimes change WB, boost Exp Comp., Enhance saturation. Then I move onto Photoshop do more editing and create a png file.

I have been saving my changes to the NEF file I did in NC, and right at the end keep only the really good NEF files. My question is: by me saving the changes I did in NC over the original NEF can I ever get back to whatever the NEF file was before my changes in NC (ie, reset all the values to their original value) - or does NC or any other RAW converter lose some detail when "enhancing" a NEF.

Should I be saving the original NEF file or the modified NEF file?

Does this make any sense?

This is hurried as I am on my way out...but...in NC it should be possible to find a menu that allows you to restore the image to its original "capture" state. When you make changes to a NEF the image itself is not altered, but an attached intruction set is modified and this set tells the computer how to display the pic.
