How do you make b&w with color in one photo?

I do not know if this is a beginner's question. Are there any tutorials, on the net, that can help me with this?
Basically, how do you take a color wedding picture... leave the flowers color and make the rest to B&W? Or... a color portrait, leave the eyes blue, the rest b&w. I love how it looks, but have no idea how to do it. Thanks in advance!

My preference is to make a copy of the background layer, change it to B+W (or sepie, monochromatic, whatever) then I erase the areas I want in color. If it's for printing it can be a litle time conuming. You can also try to select the areas o erase with the wand tool.

Another way...click the paintbrush tool and on the top toolbar change
mode to colour. Adjust the opacity to suit.

Oh! And I forgot to mention...to put the colour back just click on the history brush and brush it back on. Also, play with the brush opacity levels for some beautiful subtle effects.

There’s many way’s matt & Andy have shown 2.
I know another way to get the same effect, make selection around the flowers or what ever, I use the lasso tool to make a quick selection & then use the quick mask to fine tune.
Then inverse the selection & desaturate.

I like using this process but it can be time consuming depending on how good a job you want to do.
