You want a transluscent one - similar in density to the diffuser that comes woth your flash unit.
You set your camera to make a custom wb reading, cover your lens with it, point the camera at your subject, and then take the reading. RTFM for more finely honed instructions, including details of which buttons need to be pressed.
Yes, you're correct that if your lighting changes (or your subject, for that matter) then you need to redo your settings, but that shouldn't be a major deal. Once you get the hang of it it's really a trivial process, although oftgen the basic wb settings, tweaked a notch or two down (I find) seem to be more than adequate.
