newbie Q

Hi All
Great website , after using a P&S digi for a few years . Loved the convenience of the digital format but pained for an SLR again , after reading many good reveiws and lots of browsing on sites such as these i just updated to a D70 today . DSLR Yay !!
Anyway my Q relates to sepia / B& W - ie does it exist as in the D70 as a "on the fly" mode or are these great photos i see here in b&w shot normally & then created externally thru software?? Sorry if its a silly Q
