58MM and 67MM filters

Yes, and perhaps.
You can get adapters between most size filter threads, but you do need to be aware of the risk of vignetting. This is especially true when using a smaller filter on a larger lens - say, 62mm filter, 67mm lens mouth.
But I've got 2 52->58 adapters sitting right in front of me, together with a 52mm Cokin adapter ring.
Oh for the days when 90% of Nikkors had a 52mm mouth!
IIRC, my 24 and 35-70 both are 52mm, and I think that at least 1 of the 35s, the 50 1.8, and even the old 43-86 were all 52mm

When you could a lot of filters at 77MM and just step down to 67MM. Yes I agree vignetting is an issue as I noticed with my CPL filter when I stacked it onto a UV filter

Use 77mm on kit lens with adapter and use 62mm on 70-300 (If you have one) and this will also cover 50D if you intend to purchase this lens in the future (52mm diameter). BTW - I don't use this set up, I plan to have individual filters for each size.

Well, the reason is obvious, and I think it's fair to say that most of us have been down that path.
I'd be suggesting that each lens has its own UV filter though, because your need and usage of this filter is different from, say, a CP.
As long as you're stepping up to the filter, there will rarely be any issues with this, but again, you may wish to review the Cokin system, and just have a couple of adapter rings plus the one set of filters.
