what flash defusers do you use

I have finally got my Sb-600 & bought a omni-bounce defuser as well
what if any type of defuser do you use , or do you use a reflector ,umbrella or just ambient light
I know this will depend on the place, time of day etc
just want to know what lighting setups & problem situations people have & how they solve them
My next purches will be a light tent so i can take some pics of the food i create in my work kitchen

If I can possibly help it, I bring my Lightsphere Photojournalist diffuser and bounce it off the ceiling. If outdoors, then the LSPJ + inverted dome.

Sometimes for space/convenience reasons I can't use the LSPJ, so I use the SB800's diffuser... Though sometimes I find that I get better WB or results by simply using direct flash bounced off a wall or ceiling.
