There are two books that come highly recommended. There are hundreds to choose from on this subject for sure. A regular minefield.
Is it compositing or just Photoshop in general you are looking for? I have a great volume called "Photoshop Masking and Compositing" by Katrin Eismann which deals with the more specialised selection of parts of the image and then dealing with it from basic Lasso and "marching ants" right up to green screen compositing. Very interesting for those looking to move a little further down the track
