Has anyone done any workshops at the Australian Centre for Photography?

I did one in 1980. B+W photography, developing and printing. It was excellent

What sort of Workshop?

I did not attend any workshop but few shift as a volunteer when arrived in Sydney.
Great friendly people, great environments and a lot of exposure to Photography and art.

They look really skilled and competent.
Go there have a chat with them and/or check it out with one of the "student/teacher".
