		 As requested: Lemon Coconut SquaresThis was requested by people at Birddog's today:
 Lemon Coconut Squares Base: ½ cup of sweetened condensed milk 125g (4oz) of butter 250g (8oz) of milk arrowroot biscuits 1 teaspoon of grated lemon rind 1 cup of coconut Lemon Icing: 1 and ¾ cups of icing sugar 3 tablespoons of lemon juice 15g (½ oz) of butter 2 tablespoons of coconut Base: Place the condensed milk and butter in a small saucepan and stir over gentle heat until the butter has melted and the mixture is combined. Crush arrowroot biscuits very finely, add the grated lemon rind and coconut and mix well. Add the warm condensed milk and butter mixture to biscuit crumbs, mix ingredients together with hands. Press into a greased 28cm x 18cm (11in x 7in) lamington tin and refrigerate for 1 hour. Ice with the Lemon Icing and sprinkle with coconut. When the icing has set, cut the slice into squares. Lemon Icing: Combine sifted icing sugar, lemon juice and soft butter in a bowl. Mix well to make a smooth icing. - Nick Gallery 
 Oh, this sounds good.....and easy......my kind of recipe.
 Unfortunately soccer season has started and there is no way I will be able to make any mini meets for some time.........will have to make some of these and eat them at the next game..........at least my wallet is safer that way!  Maybe it all has to do with creativity? Going by the response in this link the theory isn't perfect. While most love cooking there are those who'd burn water  PS Shame I missed the slice Nick sounds pretty tasty!
