You guys who wait, you won't be disappointed. I promise, this thing is an absolute pleasure.

I haven't played with the 30d yet, but I have the 20d. I thought it was pretty nice, but it doesn't hold a candle to the D200 in terms of performance, handling, and capability. I've heard that it's high iso shooting is pretty good, but I've gotten some pretty darn good photos with the D200 at high ISO and the graininess looks pretty good.

My recommendation would be to hold out. I'm totally and utterly blown away, this thing consistantly explodes beauty onto the back screen.
