St Peters station has an unused line, but of course it also has 24 hour security. The flour mill line in Summer Hill is probably your best bet. Or you could try dropping off the old footbridge between Erko and Redfern, trading off more lines for more activity. There's also the Marrickville level crossing with a couple of lines, but it doesn't look very disused. Depends on how much time you need and how you feel about dealing with security. I'd be inclined to ring CityRail and ask if you can get official access - they may have a list of disused areas that have legal access.
Do try not to scare the train drivers, it's not fun driving towards an idiot when you know you can't stop before you go over where they're standing. http://www.moz.net.nz

redfern is hardly dis-used but the technology park has some cool parts of the old yards on display which look great on a nice late afternoon with the sun setting behind you.
